Long Subaru is excited to welcome Wright Old School Chocolate to our 3rd annual plant-based event. They are a bean-to-bar manufacturer of chocolate from cocoa nibs and unrefined sugar.
Peter had a desire to taste bold flavors with minimally processed cocoa nibs and unrefined sugar. His family encouraged him to use his experience to offer this vegan chocolate to others. One important feature of Wright Old School Chocolate is their search for beans. They look for ones that are most friendly to the farmers and to our earth without sacrificing all the delicious flavors of chocolate.
With years of experience and a background in chemistry they have been able to take those skills and use them on processing chocolate for the best taste, texture, and consistency.
Here is a little look at their process: They source pods that are grown and harvested by hand. Each pod contains 20-50 beans that are fermented, dried, and shipped. When they arrive the beans are sorted, roasted, cracked, winnowed, refined with organic sugarcane, tempered, and packaged.
