Every
year in the middle of winter our employees have a little friendly
competition to see who has mastered the crockpot. Also, we just like to
eat....
This year's winner is our newcomer Kym Demers recipe for 'Crazy Pineapple Chili'.
INGREDIENTS:
1LB Sweet Italian Turkey Sausage (Remove Casing)
1LB Venison Sausage (Remove Casing)
1 Medium Onion (Chopped)
1 - 20oz. can Pineapple Tidbits (Drain Juice and keep to the side)
2 - 28oz. cans seasoned diced tomatoes
1 - 6oz. can of tomato paste
1 - 15oz can Black beans (Rinsed & Drained)
1 1/4 tbs. Chili Powder
5 tsp. Ground Cumin
3 Cloves Garlic (Minced)
1LB Venison Sausage (Remove Casing)
1 Medium Onion (Chopped)
1 - 20oz. can Pineapple Tidbits (Drain Juice and keep to the side)
2 - 28oz. cans seasoned diced tomatoes
1 - 6oz. can of tomato paste
1 - 15oz can Black beans (Rinsed & Drained)
1 1/4 tbs. Chili Powder
5 tsp. Ground Cumin
3 Cloves Garlic (Minced)
DIRECTIONS:
In
skillet cook Sweet Italian Sausage, Venison, Onions. Once they are
fully cooked toss in the crock pot. Drain the pineapple, toss the juice
in the crock pot and keep pineapple tidbits for later. Add tomatoes,
black beans, tomato paste, chili powder, ground cumin, and garlic into
the crock pot. Stir everything well make sure that the pieces of meat
are not too big.
Cook on low for (6-8 hours)

** Add pineapple during the last 1/2 - 1 hr before serving**
Kym's Tips and Tricks:
"The use of venison isn't necessary, we just like the additional texture it provides. You could just double the amount of sweet sausage or combine with hot sausage."
"I serve it topped with shredded cheese, sour cream, and extra hot sauce on the side."
"Like Mom always said, things taste better the next day, so I personally cook the sausage,venison, and onions the night before."
"You can try with many different fruits I have put apples, peaches..... Comes out really good."

We also love Kym's choice of crockpot which was deemed incredibly cute. She told us it is made by Versaware and we found a picture online. Isn't it adorable!
