Why not learn to make jam at the Green Briar Nature Center and Jam Kitchen (6 Discovery Hill Road, East Sandwich; 508-888-6870; www.thorntonburgess.org), run by the Thornton W. Burgess Society. They offer both adult and family classes that will have you jamming in no time with 4 jars of your 'homemade' results to take home with you.

While you won't miss the crowds and traffic that cause congestion and frustration, prepare for the slower pace by planning ahead. Many of the Cape's best restaurants and galleries do remain open, however they will alter their schedule according to the needs of the season. The Impudent Oyster, Chatham's 'place to eat', for example is closed on Tuesdays and Wednesday but open for lunch and dinner the rest of the week.
